Goals / Objectives
Document the effect of chemical bleaching by hydrogen peroxide and/or sodium hydroxide on the changes in pistachio kernel quality, nutritional value, and aflatoxin contamination to provide a more complete picture as to the effect bleaching treatments have on pistachios beyond cosmetic whitening.
Project Methods
Determine the effect of various hydrogen peroxide concentrations and temperature conditions on the degradation, oxidation, and detection of aflatoxin B1. Scale up conditions to provide enough oxidized aflatoxin B1 for mutagenicity and toxicity testing. Spike pistachio samples with oxidized aflatoxin B1 to document changes in detectability. Determine the effect of hydrogen peroxide and sodium hydroxide on pistachio kernel quality by comparing kernel moisture and oil content. Documents Reimbursable with Paramount Farms. Log 41348.
